Hidraulics
When the aircraft engines are shutted down, the elevator and the alerons keep on neutral position. In real life once you shutted down the engines, the hidralic is not flowing anymore, therefore the alerons and the elevator comes up into a down position due to the weight of themselves.

@pepo340300:Have you noticed that there are also electric pumps on this aircraft. So even with engines shutdown but electric energy available and the electric pumps turned on this would cause that the hydraulic still flows !
In this aircraft as it is no study level it seems that the did not model the electric pumps to be able to turn off. So they seems to be on all the time -> also visible in the ECAM hydraulic page.
So i think we have to live with that
